Local Love: C Bar

At the West End of Boulder’s storied Pearl Street Mall, C Bar is the latest labor of love from the Half Eaten Cookie Hospitality group. It’s not just another cocktail lounge. It’s a space where craft, style, food, and atmosphere all converge with intent and a dreamy atmosphere.
C Bar is the first full cocktail oriented project from Boulder restaurateur Bryan Dayton, who’s been behind the bar at local favorites like Juanita’s and Frasca. He even won Bombay Sapphire’s Most Inspired Bartender in 2011. He teamed up with longtime friend and chef Samuel McCandless, known for his work at Corrida and other kitchens, to create a spot that’s polished and creative but still easygoing. It’s the best spot in Boulder for top notch drinks, good food, and a relaxed night out. It were you go when you want more than just a drink, and rather, an experience.
The cocktail menu is a true team effort, with Bryan Dayton crafting about half and mixologist Diego Baud, who also runs a bar overseas. Their different styles shine through, like Dayton’s Grand Som with green Chartreuse and cucumber, or Baud’s Queen’s Elixer with tequila, hibiscus, and egg white finish. Add in a staff that’s genuinely friendly and knows their stuff, and the whole experience feels fun, elevated, and easy to enjoy.

The food is also swoon worthy at C Bar, getting just as much love as the cocktails. Chef Sam McCandless puts a fresh spin on bar classics: shareable plates, creative snacks, and standouts like a shrimp cocktail made with tiger shrimp and a punchy yuzu kosho sauce. The real showstopper, though, is the burger: Corrida Cattle Company beef layered with brie, crispy onions, and a rich beef bordelaise. There’s no shortage of incredible food items to order here, and shows that this isn’t just your typical cocktail bar. You really can have it all here.

Beyond the food and drink, is the look itself. C Bar has a very deliberate, refined aesthetic. Deep jewel tones, walnut accents, mid mod elements, and delicate glassware are the vibe, making it feel moody and romantic. The result is a polished, sexy lounge space that still feels warm and inviting. It’s perfect for date night, or a fun night out with friends. The bar doesn’t take itself too seriously either, where guests can dress up, or down, and still feel at ease. If you’re in the area, or looking to make a special trip to Boulder, this place is definitely worth a trip. And don’t forget that there’s live music on Friday nights, making this a great spot to hear a local musician while sipping a delicious drink.
